Ingredients:
2 potatoes - chopped
2 Carrots - chopped
4 stalks of celery - chopped
½ or ¼ head of cabbage – chopped
1 onion - chopped
2 tomatoes – cut in eighths
1 tbsp butter or margarine or substitute with healthy vegetable oil
1 bay leaf
Salt and Pepper – to taste
Cooking instructions:
In a large soup pot, soften the onion in butter at medium-high heat. Add potatoes and fry for 3-4 minutes.
Add 4-5 soup bowls of water before the onion browns.
Add celery, carrots, cabbage, bay leaf, salt and pepper.
Cover and let water reach a boil, then reduce heat to low and simmer.
When carrots soften (35-45 minutes maybe), add tomatoes and continue to simmer for another 20 minutes or so.
Serves 4-5
*Add 1 package of stewing beef for a hearty beef stew.
